Today I decided to get the apron out and do a bit of baking, I'm making red velvet cookies. There basically like chocolate cookies but they have less cocoa in them and more vanilla extract. They also have the fun red colour added to them which makes perfect for the festive season.
To start with I got all my ingredients ready. I like to get everything weighed out and ready to just pour in.
You will need:
198g Plain flour
21g Coco powder
150g Brown sugar
50g Granulated sugar
1 teaspoon Baking soda
115g Butter
1 egg
2 teaspoons vanilla extract
1 tablespoon of milk
1 to 1.5 teaspoons Red food gel depending on how red you want them. ( I find sugar flairs Christmas red a great red food gel)
180g chocolate chips + extra for the top.
First off you want to take the flour, cocoa powder and baking soda in one bowl and set aside.
2- Put your butter in a bowl and whisk it using a free standing mixer or a hand mixer like me, I'm using my kenwood mixer.
3- mix until it's soft and creamy like in the picture
4- add your brown and granulated sugar and mix together.
5- add ur egg,vanilla extract and milk then mix again.
6- add your red food gel the mix until all blended together like in picture 3
7- add the rest of your dry ingredients and mix together. Then add the choc chips and mix that together too.
8- when mixed it should look like picture 1, this is when you can then decide to add more food colouring if you want it redder.
9 - next is a crucial part, you need to chill the mixture in the fridge for an hour. Cover the bowl with tinfoil or cling film and pop in the fridge.
10- once the hour is up preheat your oven to 180 degrees. Then take your mixture out the fridge and roll then into balls . Pop them onto a cookie sheet or a lined baking tray spreading them evenley apart like in picture 2. (There a bit shiney as I had to take them back out the oven so I could quickly take a photo of them)
11- they then need to go in the oven for 11 minutes. I didn't have very big trays or a cookie sheet so I had to do a couple of batches over a few trays but as they don't take long to cook it took no time at all.
12- once cooked take them out the oven and sprinkle on some choc chips. Then move them into a cooling rack so they can cool.13- enjoy them
I really enjoyed these cookies, especially when they have not long been out the oven.
If I was going to make these again I think instead of the choc chips on top I would make a dip in the middle when warm with my thumb and make some cream cheese frosting for the middle to mak them more red velvet like.
